Country of salmon

Today we will have some salmon. As side dish I prepare fennel, sweet bell pepper and potatoes.

Start with the potatoes. Wash 500 grams of small sized potatoes. Boil in salted water until al dente. Drain. Set aside.

Chop and fry 1 red onion, 4 garlic cloves, 1 chili, 1 fennel, 300 grams of bell pepper in 1 table spoon of  oil. Add 2 teaspoons of dried basil and 2 teaspoons of dried thyme. Stir and bake for approximately 20 minutes. Add the potatoes. Continue to bake for another 15 minutes. Season with pepper and salt.

In the meantime mix 1 table spoon of horse radish puree with 4 table spoons of low fat Greek yogurt, 1 table spoon of mayonnaise, 1 finely chopped garlic clove, pepper, salt and fresh parsley.

Heat the grill pan. Spread some oil. Bake the salmon (first skin side), both sides.

Dinner is ready.
