Late dinner in Kristiansand

We started our day rather late ( I’m not going into details about what happened 🙃), but we still finished our program.

As most of you already know, I’m never too tired to cook, especially not after such a busy day.

My ingredients for tonight : 250 grams of green asparagus ( expensive in Norway ), 500 grams of broccoli, 1 chili, 1 red onion, 4 garlic cloves ( of course), 120 grams of couscous, 1 lemon, fresh mint, 1 table spoon of cumin seeds, 200 grams of halloumi and olive oil.

Boil some water. Put 120 grams of couscous with a pinch of salt in a recipient. Cover with boiling water. Put the lid on the recipient. Allow to rest.

Chop and fry 1 red onion, 1 red chili and 4 garlic cloves in a drizzle of olive oil. Stir. Add 1 table spoon of cumin seeds. Add the chopped peeled stem of the broccoli. Stir and fry. Add the broccoli in little roses. Remove the hard end of the asparagus. Chop in pieces of approximately 2cm. Add to the pan. Stir and fry. Add the liquid of the halloumi package. Add extra if needed.

Clean the lemon. Add the zeste to the pan. Stir. Once the vegetables are al dente. Add the juice of the lemon. Set aside.

Cut the halloumi in smaller cubes. Bake crispy in olive oil.

Chop the fresh mint ( you decide the amount). Mix 150 grams of Greek yogurt with 1 table spoon of fresh mint, pepper and salt.

Mix couscous with vegetables. Add the rest of the mint. Spread the halloumi. Finish with the yogurt.

Enjoy a late night dinner as celebration of a beautiful day.
