Cooking recipes in a campervan cannot be too complicated, as you can imagine. We, or is it mainly I, prefer warm dinners, even in summer (especially when the outdoor temperature is between 5 and 10 degrees).
I think this recipe is already more than 20 years on my list. Originally it’s from Nigella Lawson. I remember most of the ingredients, but I have to change it a bit ( which I tend to do with almost every recipe 🙃).
Instead of marsala I use red wine vinegar, and instead of fresh salvia/sage ( did not survive in the campervan) I mix dried basil and fresh basil.
Start with the pasta. Boil 160 grams of whole wheat pasta in salted water until al dente. Drain and keep a cup of the boiling water. Set aside.
Put 60 grams of raisins in a cup. Add 50 ml of red wine vinegar. Allow to marinate.
Toast 40 grams of pistachio ( normally I would use pine nuts, but this leftover needed to be used first). Set aside.
Chop and fry 4 garlic cloves, 1 red chili and 1 red onion in a drizzle of olive oil. Add 3 chopped larger medium sized courgettes ( approximately 750-800 grams for 2 is our portion), 1 table spoon of dried basil and salt. Continue to bake. Add the pistachio and the raisins with the marinade. Continue to bake.
Once the courgettes are al dente, add the pasta. Finish with some fresh basil and grated parmesan.
