Moroccan spices in Denmark

We are near Copenhagen. After a beautiful sunny morning it’s raining cats and dogs. We spend the morning looking for trolls ( Thomas Dambo is amazing) and visiting the cathedral with the royal graves in Roskilde. With a that rain,  we decide to visit the interesting modern museum Louisiana which remains open until 10pm. We both have 2h. I go first while Iris stays with Oskar in the campervan. After my visit Iris has 2h for the visit while I stay in the campervan. I decide to do the ‘mis-en-place’ for our dinner.

Chop 2 red onions, 4 garlic cloves, 2 chili,  500 grams of sweet bell pepper, 2 courgettes and 300 grams of firm mushrooms. Set everything aside.

After arriving at our private sleeping spot near a lake, open the gas and start cooking.

Fry onions, garlic, chili and bell pepper in a drizzle of olive oil. Add a few stems of rosemary, 2 teaspoons of raz el hanout, 1 teaspoon of a chicken spices mixture ( contains paprika, salt, curry etc). Stir regularly.

In the meantime, pour salted boiling water on 120 grams of couscous ( not too much and not too little). Cover and allow to rest.

Add the chopped mushrooms and the chopped courgettes to the pan. Stir and bake. Add a little bit of water if needed.

Once the vegetables are done, stop the fire. Serve the vegetables on the couscous.

  1. Sounds like a healthy dish sis. Still hope you get more sunny days although cossy in the campervan to cook, read, be lazy…….Groot soen en drukkie vanuit The Dale.
