Grateful

Now we are really going on our 5, almost 6 months of touring with Gloria, our campervan. It’s weird to leave our amazing house and Roquefort ( our almost 15 y old cat). So πŸ™ that our lovely neighbours, Monica and Paolo, will look after them.

I really enjoyed my last day of the school year. I’m so πŸ™ to be part of that young, inspiring community and all those warm goodbye hugs will keep me company until my return on the 7th of November.

I admit I was really nervous during the last period.  I had so many to-do lists. Iris tried to ignore my state of mind and continued to do her lists πŸ™ƒ.

At 11.30 this morning we were finally able to leave and, immediately,  I felt relaxed. There were no more lists, we wouldn’t go back, we were on our way. After a stop in Parma, which is a very pleasant city, we stopped for the night on a parking place next to Meugliano lake. The noise of a wedding party and the frogs didn’t bother us.

For our dinner we had lots of vegetables with some halloumi.

As I didn’t want to throw away food out of the fridge, so we took the whole lot of remaining things.

A leftover of nduja adds perfect flavor in a vegetable stew. Chop 1 red onion, 4 garlic cloves, 2 sweet bell peppers, 1 large fennel and a handful of cherry tomatoes. Put in a pan. Add a drizzle of olive oil, 1 table spoon of dried basil and 1 table spoon of the nduja. Allow to simmer for approximately 20 minutes. Stir now and again. Slice the halloumi. Fry in a hot pan with some olive oil. Turn.

Serve the vegetables with the halloumi.
