Lots of omega 3

A fat fish such as mackerel delivers an impressive amount of omega 3. Delicious.nl of February has a marvelous recipe with mackerel, fennel and cauliflower which I love to share with you ( docV style 😀).

For 2p, ask the fishmonger to prepare you 4 mackerel filets. Store in the fridge.

Chop a medium sized cauliflower in roses and cubes ( the goodlooking outer leaves included). Put in a large pan filled with 250 ml of semi skimmed milk and 250 ml of water. Add 4 peeled garlic cloves and some salt. Boil during 15 minutes. Keep half amount of the boiling liquid. Blend. Season with pepper, nutmeg and some extra salt if necessary. Keep warm.

While boiling the cauliflower, slice 1 fennel. Put on baking paper. Spread a drizzle of olive, pepper, salt and 1 table spoon of dried thyme. Roast in the oven at 220° during 20-30 minutes. Turn halfway. Add the mackerel filets on the baking tray during the last 5-10 min.

Spread the cauliflower on the plates. Put some fennel and the mackerel on top. Finish with a little drizzle of lemon juice.
