I always have homemade bread, mostly whole wheat in various ways. Now and again I want to forget ( not completely) that high in fiber en low in sugar is healthier, like today 😉. And thus, we’re having brioche today.
Inspired by Google, I find a recipe of brioche with kefir as one of the ingredients. What do I need for my docV brioche: 500 grams of all purpose flour, 100 ml of lukewarm milk, 125 ml of kefir, 80 ml of sunflower oil, 50 grams of a zero kcal sugar ( based on eritrol= natural ingredient of fruit, as 🍐and 🍇), 30 grams of white sugar, 1 sachet of vanilla sugar, 25 grams of fresh yeast, 1 egg, the zeste of 1/2 lemon and some butter to grease the oven dish.
Dissolve the yeast in the lukewarm milk. Add the egg, sunflower oil, kefir, sugar and alternative and the zeste. Stir. Add the flour in smaller portions. Mix and knead until you have an elastic dough. Put in the bowl. Cover with a wet towel. Allow to rise on a warm spot for at least 2h. Knead again. Divide in 8 equal portions. Grease a round ovendish of approximately 22cm. Spread some flour. Put the 8 balls in the oven dish. Cover with the wet towel. Allow to rest for at least 30-60 minutes in a warm spot. Bake in the traditional oven at 180° for 30-35 minutes. Remove the brioche from the pan. Brush some water on the surface. Cool down or eat immediately.
