After an incredible summer with lots of nice people passing by, a fantastic holiday of 3 weeks in the amazing mainland of Greece, it’s about time to post something.
An old recipe in a ‘date-night- version’ seems a proper way to catch up.
Remember the cookbook of Jamie Oliver ‘Jamie’s Italy’ and his recipe with pasta, shrimps and semi-dried tomatoes? If not, no problem, tonight we start our traditional date night with a movie with a puff pastry- pizza with the same ingredients.
Drain 1 can of semi-dried cherry tomatoes ( drained weight 180grams). Put in a small blender. Add 4 chopped garlic cloves, some chili flakes and the juice of 1/2 lemon. Blend. Taste, add pepper and salt if needed. Drain and dry 300 grams of cleaned good quality scampi. Mix them with the zeste of 1/2 untreated lemon.
Spread a ( lighter) ready made puff pastry on a baking sheet on an oven tray. Spread the mixture on the pastry. Spread scampi and zeste on the mixture. Finish with mozzarella or 75 grams of grated cheese.

Bake in the preheated oven at 180° for 25-30 minutes. Finish with arugula and balsamic vinegar.
