‘Healthy’ scones

In search of afternoon delights, I found this lovely recipe (with a little variation) in the Belgian cooking magazine “Libelle lekker’.

Mix 40 grams of melted butter with 4 table spoons of maple syrup, 150 grams of low fat yogurt and 70 ml of semi skimmed milk. Mix 120 grams of spelt flour with 80 grams of oat flour ( mixed flakes), 60 grams of oatmeal flakes, 2 teaspoons of baking powder, 1/2 teaspoon of cinnamon and a pinch of salt. Mix wet and dry ingredients thoroughly. Add 1 apple, chopped in tiny pieces. Mix with your hands.

Take a spring form of 20-24 cm. Cover with baking paper. Spread the dough on the baking paper. Cut the dough in 8. Bake in the preheated oven at 180° for 20 minutes. Remove the spring form. Separate the 8 parts on the baking paper. Spread some oatflakes. Bake for another 15-20 minutes. Cool down.

Serve the scones with low fat Greek yogurt and sugar free raspberry marmalade or fresh raspberries. 😋
