Nothing better than fresh peas, although frozen are a great alternative. Fresh polpo first in the freezer is for sure recommended to obtain a perfect tender meat. So, a small freezer is a must. A large freezer has certain advantages in certain conditions. I’m so fortunate with local shops, a weekly market and, probabile the most important element, with time not only to prepare my shopping list but also to organise my shopping.
For 2p, you need: 1, 2 kilo of fresh peas in pods or 450 grams of frozen peas, a small polpo of approximately 1 kilo cleaned and frozen, 1 can of peeled tomatoes, 1 onion, 4 garlic cloves, 1 chili, thyme and parsley and 75 ml of white wine.
Start with the frozen polpo. Put in a pan filled with water. Boil for approximately 1h until really tender. Drain. Chop in parts and store cool.
Chop 1 red or white onion, 4 garlic cloves and 1 chili. Heat a pan. Add 2 table spoons of olive oil. Fry the chopped onion- garlic-chili for a few minutes. Pour the wine in the pan. Allow to evaporate. Add the tomatoes and a refill of the can with water. Add fresh thyme stems and vegetal stock powder. Allow to simmer for 15-20 minutes. Add the peas and the polpo. Simmer for a few more minutes. Taste, add pepper and salt. Finish with fresh parsley.
