After a nice walk in the beautiful landscape, it’s time to prepare my weekend cake.
With a ready made rectangular puff pastry this recipe is amazingly easy.
Mix 500 grams ricotta with 2 eggs, vanilla powder/extract, the zeste of 1 lemon, 2 table spoons of pine nuts and liquid stevia ( taste to get your personal taste). Spread the rectangular pastry with the added baking paper in an appropriate baking tray. Pour the ricotta mixture on the pastry. Finish with pine nuts and a valentine decoration made with the leftover edges of the pastry (PS I have no special connection with valentine’s day but I couldn’t throw the edges in the rubbish bin 😄).
Bake in the oven at 200° for 30-35 minutes.
