I planned to prepare this recipe for friends tomorrow but they made themselves clear that their main purpose is Oskar, our amazing puppy and expect take away pizza from our own village. Iris tried to explain me that sometimes I have to accept that guests are not really into healthy food with fish, lots of vegetables and that it could also be a relaxing evening for me 😏.
So, this fish pie will be a special treat for the 2 of us.
Chop 1 large broccoli of 600 grams in smaller parts. Chop 1 leek and 4 garlic cloves. Heat a pan with a drizzle of olive oil. Bake the vegetables for 15 minutes. Stir now and again. Add 1small can of anchovies, lots of black pepper and some extra salt if needed. Mix with 300 mg of low fat Greek yogurt and a handful of chopped wild fennel. Cut 400 grams of skinless salmon filet in large parts. Spread in an oiled round oven dish. Pour the vegetables on the salmon. Cover with a round ready made puff pastry. Make a few incisions in the pastry.
Bake in the oven at 200° for 30-40 mins. Allow to rest for 10 mins. Serve. Tomorrow pizza night 😜
