Black gold

Yesterday we decided to allow Oskar, our super energetic puppy of almost 4 months, the entrance to the full garden which looks more like a desert for the moment. He explored it in every little corner and tasted everything. His nose was always pointed towards the ground. On a certain moment Iris saw him digging on a spot he was attracted to since he arrived. And you know what????

We found 200 grams and Oskar surely consumed already a good portion before we realized what he was doing down there. Truffle hunting is a protected activity. I don’t know what happens if the official ones would know. Anyway, you read cruel things😱.

The summer truffle has a less pronounced flavor, but still. The largest ones can become 10 cm long (our largest one is 7-8 cm and weighs 100 grams). Clean them with a brush, even with cold water to remove the soil. Wrap them in kitchen paper and store them in a glass container on a cool spot for maximum 1 week. We shared our treasure with the neighbors and a few friends.

At the end of this long, exciting day a pasta ( it was too late to prepare some home made pasta and thus, I cut a few fresh lasagna sheets in long stripes) al dente with some butter, pepper and salt was a lovely companion for the first tasting of some ‘home made’ summer truffle. The choice between butter or olive oil is up to you, but the specialists prefer butter to intensify the earthy flavor of the truffle.
