Easy lasagna

Lasagna is considered to be comfort food. It’s challenging to find less rich versions without questioning the flavor.
Defrost 400 grams of spinach. Drain. Mix with 250 grams of ricotta, 2 teaspoons of dried thyme, pepper, salt and nutmeg.
Chop and fry 4 garlic cloves and 1 red onion in a drizzle of olive oil. Add 500 ml of tomato passata, 1 table spoon of dried oregano, chili flakes and a pinch of sugar. Allow to simmer for approximately 15 mins. Taste, add pepper and salt. Mix with 250 grams of a  frozen seafood mixture. Cool down.
Oil a rectangular oven dish. Start with a thin layer of tomato sauce. Put a layer of dried lasagna sheets. Spread some of the spinach ricotta mixture, continue with the tomato seafood mixture and spread grated parmesan cheese, continue. Finish with the tomato sauce and parmesan cheese. Bake in the oven at 180° for approximately 25 mins, until the surface is golden brown.
Serve and enjoy this delicious lasagna.
