People are looking forward to the summer season, but once it’s there, they realise how hot it can be. I must admit that it doesn’t really bother me. Everything is going a bit slower, but that’s it. Of course, that’s not true for everyone. I have a lot of respect for people doing hard work outside or working hard inside in hot circumstances.
An evening meal outside with loads of anti- mosquito spray, the noise of crickets in the background and loads of stars above remains special.
What’s on our plate tonight?
Chop 2 onions, 4 garlic cloves, 1 large sweet pepper and 1 chili. Spread in an oven dish. Spread 500 grams of halved cherry tomatoes on top ( put the skin downwards). Spread 1 table spoon of dried basil, pepper, salt and a drizzle of olive oil..
Put in the over at 200° for approximately 30 mins. Put 2 white fish filets on top. Put back in te oven for 10-15 mins. Finish with fresh parsley and lemon.
Serve with oven baked hasselback potatoes. Time to cool down 😉
