If I would have to describe the taste of hot summer nights the flavor of sweet juicy tomatoes is probably the best description. As a child I could eat tomatoes like apples. My mother used to make tons of passata in the summer. At that moment the tomatoes were at their best, cultivated under the Belgian sun. 😋
A few days ago I bought different types of tomatoes on the market. Let’s combine them in a carpaccio.
Slice 800 grams tomatoes as thin as possible. Spread them on 4 plates. Chop 3cm of ginger,slice 2 fresh spring onions. Mix with 4 table spoons of sunflower oil and 3 table spoons of old apple vinegar. Add pepper and salt. Spread the dressing on the tomatoes. Finish with chopped fresh coriander ( I have Vietnamese coriander leaves in the garden).
Store fresh. Serve as lunch or starter. The flavor of summer❤.
