The Amalfi Coast is awesome. Mozzarella and lemon are two important ingredients. This delicious appetizer, a variation on the recipe of Jamie Oliver, is such a fantastic combination of those two protagonists.
Buy a medium sized Amalfi lemon ( they can be as big as a melon). Walk along the coastline and take 4 fresh lemon tree leaves 😉. For 2p use 2 slices of the central part ( keep the other part for the fresh fruit juice tomorrow ). Remove the meat. Put the leaves on baking paper on an oven tray ( 2 by 2). Put the lemonskin circles on the leaves. Put a slice of mozzarella inside each circle. Add pepper and 2 anchovies on each. Cover with another slice of mozzarella and 2 anchovies each. Finish with pepper, dried thyme and the lemon juice squeezed out of the inside meat.
Put 15 mins in the oven, below the hot grill.
