It was a lovely day. This morning I was introduced in the local ‘Bar Centrale’ by Anria, a lovely lady who invited me before at the pilates class in the village. Italians go to a bar not only to have some drinks or food but also to meet the other local people and to get an update of the local life 😉.
On my way back I bought 2 medium sized eggplants, not really thinking about what to cook tonight.
The afternoon we continued painting outside. The weather is probably too good to remain, and upsets the flora and fauna, but I can appreciate painting furniture outside.
Painting is also an ideal activity to think about what to do with eggplant.
Wash the eggplants and cut in halves. Grate the eggplant with the help of the magimix. Add 1 can of drained chickpeas, 4 garlic cloves, 1 red onion, 1 egg, 1 table spoon of dried oregano, some chili flakes, pepper and salt. Blend. Add some breadcrumb to obtain a firmer mass. Create some flat burgers and put on baking paper. Sprinkle some olive oil on the burgers. Bake in the preheated oven at 220° for approx 40 mins.
Serve the burgers with a tomato salad and
some Greek yoghurt mixed with a drizzle of olive oil, pepper, salt and some fresh basil and chives. For a real burger meal, serve with toasted pita breads.
