Salmon is a perfect fish to be frozen. Defrost the fish in the fridge. Remove the skin and cut in large pieces.
Wash 500 grams of spinach. Chop and fry 4 garlic cloves. Add the spinach. Add pepper and salt.
Put 500 grams of cherry tomatoes in an oven dish. Add some pepper, salt, a drizzle of olive oil and 1 table spoon of dried thyme. Bake in the oven at 180° for 20-30 mins. Remove the tomatoes. Put the spinach below, spread the tomatoes and the fish.
Blend 60 grams of black olives with 50 grams of pistachio. Add some olive oil.
Spread the tapenade in between fish and vegetables. Bake in the oven at 180° for another 15 mins.
Finish with fresh dill. Super healthy meal for 2-3p.
