Even after a full day of class, being completely saturated, I love to come home in my kitchen and focus on our dinner. Whether this is considered to be insane, or not, I don’t care, as long as I can enjoy my passion of healthy cooking and eating.
For 2p, blend 350 grams of defrozen and dried shrimps, 2 garlic cloves, 1 table spoon of dill, 1 table spoon of fresh coriander, 1 teaspoon of red curry paste and 1 egg. Taste, add pepper and salt.
Oil your hands and make some balls. Put on baking paper. Bake in the preheated oven at 200° for approx 20 mins.
In the meanwhile, bake 800 grams of mushrooms in a small amount of butter. Stir regularly. Add 6 halved spring onions, 2 sliced garlic cloves and 1 chopped chili pepper. Finish with a drizzle of sesame oil, a drizzle of soy sauce and 1 table spoon of sesame seeds.
Serve the shrimp cookies with the mushrooms, spring onions and some lime juice.
I wouldn’t mind to be considered as abnormal ;-).
