A few days ago ‘mama Anna’ made us a ‘sformatino di gobbi’

Finally I tried those ugly look-alikes of celery. Cardoon is an old vegetable, a family member of the artichokes. Remove the hard part, the ugly parts, the wires by peeling them. Put the pieces in water with lemon. Boil the cardoon for 30 mins, or even more, until al dente. Drain and chop in small pieces.

Mix the cardoon (approx 500 grams left) with 3 eggs, 40 grams of grated parmigiano, 1 table spoon of dried oregano, 100 ml of milk, pepper and salt. Put in small oiled dishes. Put the dishes in a large oven pan, filled with a few cm of water. Bake in the oven at 200° for approx 30 mins.

Serve as starter or as side dish. Tasty!
