Whether ‘baby’ artichokes is the correct definition for small artichokes without ‘hair’ inside, I have to check, but now you know already what I mean. Those babies can be really small ( approx 4-6 cm), or a bit bigger (approx 8 cm). 5 of the bigger ones are a nice portion of vegetables for 2p.
Clean the artichokes, this is : remove the hard parts of leaves and stem, and chop thinly. Mix the chopped artichokes with some lemon juice, to prevent darkening, and the zeste of the lemon.
Chop and fry 4 garlic cloves, 1 onion and 1 peperoncini. Add the artichokes and 1 teaspoon of dried basil and bake until al dente.
Boil some pasta (add a bay leaf in the water for extra flavor).
Mix the pasta with the artichokes. Add pepper, salt and fresh parsley. Finish with good olive oil and grated parmigiano. Simple, delicious Italian cooking.
