Salads, in new and traditional combinations, are colorful dishes for every season.
Grind 1 teaspoon of roasted cumin seeds, ½ teaspoon of chili flakes and 1 garlic clove in a mortar. Add 3 table spoons of olive oil, the zeste and juice of 1 lime. Taste, add pepper, salt and a bit of honey.
For 2p crush 1 rouphly sliced cumumber with the mortar. This method (advised by Yvette Van Boven in delicious.nederland of september 2018) allows cucumber to absorb the dressing in an optimal way. Mix the cucumber, 1 chopped avocado, 2 chopped nectarines with the dressing. Add a chopped mixture of fresh herbs (verveine, parsley,…). Roast 2 table spoons of pumpkin seeds.
Put the marinated vegetables/fruit on a few leaves of green salad. Spread the pumpkin seeds and some good quality buffalo mozzarella. Finish with nigella seeds.
