Barbecue or grill pan, it’s up to you

Pancetta grillata…Iris says ‘no’! I’m willing to try it. Thus, chicken for Iris and pancetta for me, same marinade and same side dish.

For the marinade mix the juice of 1 lime, 1 chopped spring onion, 1 chopped spicy little pepper, 3 cm of grated ginger 1 table spoon of honey, 1 table spoon of olive oil, pepper and salt. If you prefer a real cripsy pancetta grill the pancetta shortly, at both sides, before putting the meat in the marinade. The chicken can be marinated raw.

As side dish, chop a large (or 2 smaller ones) cucumber, without the seeds and skin, in small cubes. Mix with the juice of 1 lime, a drizzle of olive oil, pepper, salt and a few chopped mint leaves.2018-08-13_19.34.59[1]

Grill the meat. Serve with the marinade and the fresh side dish. Pancetta, not for every day, but not bad at all.
