Pancetta grillata…Iris says ‘no’! I’m willing to try it. Thus, chicken for Iris and pancetta for me, same marinade and same side dish.
For the marinade mix the juice of 1 lime, 1 chopped spring onion, 1 chopped spicy little pepper, 3 cm of grated ginger 1 table spoon of honey, 1 table spoon of olive oil, pepper and salt. If you prefer a real cripsy pancetta grill the pancetta shortly, at both sides, before putting the meat in the marinade. The chicken can be marinated raw.
As side dish, chop a large (or 2 smaller ones) cucumber, without the seeds and skin, in small cubes. Mix with the juice of 1 lime, a drizzle of olive oil, pepper, salt and a few chopped mint leaves.
Grill the meat. Serve with the marinade and the fresh side dish. Pancetta, not for every day, but not bad at all.
