Gerda and Herman leave tomorrow. Yesterday we enjoyed a lovely dinner in the city. Today I hope to serve them a nice meal as closure of a pleasant week together.
Buy a fresh big whole sea bass (for 4p approx 1.5 kilo) without intestins. Slice 1 kilo of courgettes and 1 kilo of potatoes thinly. Put the courgettes and potatoes in a big oven dish. Add 1 chopped red onion, 6 chopped garlic cloves and 1 chopped chili pepper. Mix everything. Add a few chopped sage leaves, pepper and salt. Rinse and dry the fish. Season the fish inside and outside with pepper and salt. Fill with a few slices of lemon and some stems of fresh rosemary. Put the fish in the same oven dish. Spread 100 ml of white wine and a good drizzle of olive oil. Bake in the oven at 180° for approx 45 mins.
Serve and enjoy a pure italian dish.
PS thanks to Georgio Locatelli for the inspiration
Sounds delicious
