A muffin baking tin is ideal to create the perfect size of the baskets. Oil each filo pastry sheet with a brush. Fold a few times to obtain a small square which fits in each muffin hole (oil the tray as well). Mix 2 chopped garlic cloves with 1 teaspoon of dried basil and 1 teaspoon of olive oil. Cut 6 mozzarella pearls in 2. Fill each cup with ½ bocconcini, 2 chopped cherry tomatoes, a bit of garlic/basil, pepper and salt and finish with ½ bocconini. Put the cups in the oven at 180° for 15 mins approx. Serve with fresh basil and balsamic vinegar. Perfect appetizer for 2/3p.
