While our visitors are on their way back to Belgium, I make everything ready for our trip to Cinque Terre. How lucky are we to live in the central part of this lovely country. After 2h and 40 mins drive we arrive in our lovely appartment outside Pignone. The kitchen is small but so complete. Our first dinner is simple but healthy. Chop and fry 1 onion, 4 garlic cloves and 1 spicy pepper. Add 1 chopped bell pepper, 400 grams of cherry tomatoes, pepper and salt. Stir now and again. Boil 150 grams of pasta in salted water. Mix pasta and sauce and add a can of good quality tuna towards the end. Finish with fresh parsley and a drizzle of lemon.
