Make your own paneer to prepare Malai Kofta

Paneer is a firm cheese based on cows milk. Put 3l of whole milk in a large casserole. Heat the milk while stirring. Just before the moment of boiling, add the juice of 2 lemons. Continue to stir and allow the milk to boil for 1 min. The curdling process starts. Cool the milk down. When you notice  the milk whey and cheese are seperated, pour the paneer in a light towel based in a colander and keep the whey. The whey can be used for other purposes. I prepared the rice in it, but it can also be used in the garden, says internet. Try to find a way to stabilize the towel hanging in a large pan and put the whole construction in the fridge for a few hours or an overnight.

The paneer becomes really firm. Mix the paneer in the kitchen robot with 1 boiled potato, 2 table spoons of chopped coriander, 2 teaspoon of coriander powder, 1 table spoon of cumin powder. Chop 50 grams of raisins and 50 grams of cashew nuts in the blender. Add to the paneer, but keep some to finish the whole dish. Add 1 chopped, blanched  and drained carrot and 100 grams of blanched and drained peas. Mix everything thoroughly with your hands. Taste, add pepper and salt. Make little balls with oiled hands. Put the balls on baking paper. Bake in the oven at 180° until they are colored. Turn halfway. Cool down and be careful, they easily fall apart.

Chop and fry 2 large onions, 4 garlic cloves and 1 spicy little pepper( more if you prefer more spicy) in some oil and some salt. Before the onion would become brown, add 2 cans of tomatoes. Allow to simmer to get a thick sauce. Stir now and again. At the end of the cooking proces add 1 table spoon of garam masala, 1 table spoon of cumin powder, 1 teaspoon of coriander powder and a pinch of turmeric. Mix the sauce. Add 200 ml of cream. Taste, add pepper and salt. Put the balls in a large oven dish and pour the sauce on the balls. Finish with the kept part of grinded raisins and cashew nuts. Put in the oven at 180° for 20 mins. Serve with fresh coriander, boiled rice or naan. Perfect side dishes (in case of serving this as only dish) are green salad, raita , a indian tomato salad. Approved by Puneet.
