½ white cabbage = approx 500 grams + 1 green apple = approx 180 grams + 2 stems of a white celery and 1 small onion = perfect amount of vegetables for 1 meal for 2p.
Chop the white cabbage and onion in the kitchen robot or with a mandoline. Mix with little cubes of 1 green apple and thinly sliced white celery. Add a dressing of 4 table spoons of light mayonnaise, 6 table spoons of light yoghurt, 2 table spoons of maple syrup, pepper and salt. Add 2 table spoons of raisins, cranberries or goji berries. Store the salad in the fridge for at least 4h. A cripsy baked halloumi cheese is delicious with this classical coleslaw.
