Fresh fish = shopping day

Whole dorade in advertising on my shopping day! A tasty fish does not need much ‘decoration’ to be delicious.  For 2p, cut 500 grams of potatoes in chubby wedges. Put on baking paper. Add a drizzle of olive oil, pepper, salt and some rosemary. Put in the oven at 200° for 40-60 mins. Stir now and again. Clean a small portion of fresh peas and real fresh fava beans ( it’s sad that there is so much waste = probably a good idea to find out what else can be done with it in a future recipe).Blanch shortly, together in salted water, drain and rinse with cold water (to keep them as green as possible). Clean and dry the dorade (600-700 grams for 2p). Season with pepper and salt. Put a few slices of lemon and some parsley in the belly of the fish. Put the fish in the oven for 15, max 20 mins (check oven time in function of the potatoes). Chop and fry  1 red onion, 4 garlic cloves. Add 100 grams of baby spinach, pepper and salt. Add 3 chopped tomatoes,  the zeste of 1 lemon, the peas and fava beans. Chop 1avocado in cubes and mix with some lemon juice. Mix the avocado with the vegetables. Serve everything together. And : Yes, you are allowed to have some ketchup with the crispy potatoes ;-).
