We are still in Brussels. Our dog Pillo is back from hospital in our temporary home after a delicate surgery and he is doing great! What a relief.
My choice of the day is eggplant and…yes… with North Sea shrimps. Halve 3 eggplants and make incisions in the meat. Oil them and put in the mini oven at 200° for 40 mins. Turn halfway. Bake 1 table spoon of flour in 1 table spoon of butter mixed with 2 chopped garlic and 1 chopped spicy little pepper. Add 150 ml of white wine and 250 ml of semi-skimmed milk. Stir and allow to cook. Mix the sauce with the juice of ½ lemon, pepper and salt. Add 125 grams of North Sea shrimps and a lot of chopped parsley. Spread the sauce on the white side of the pre baked eggplant. Finish with grated gruyere. Bake in the oven at 200° for 30 mins. Finish with fresh shrimps and baked young potatoes. Fabulous dish.
