Soup is in very many ways ideal, I admit (although Iris would say I too often forget this). Chicory soup served with oven dried cherry tomatoes in a little cup is perfect as healthy appetizer.
Fry 1 chopped potato, 1 chopped white onion, 3 chopped garlic cloves in some olive oil. Add 500 grams of chicory (mixed chicory and some leftover of radicchio). Add 1 table spoon of dried thyme. Stir now and again. Add 1 liter of chicken stock (a cube is allowed). Allow to simmer. The soup is ready if the vegetables are tender. Blend the soup, add pepper and salt. Serve with an oven dried cherry tomato (blogpost One more day to go before I make my new shopping list…woop woop )or chopped parsley for some extra color.
