Mix 200 grams of smoked salmon, 200 grams of ricotta, 1 table spoon of sour cream with the juice and lemon zeste of 1 lemon. Add a drizzle of good olive oil, a pinch of cayenne and some extra pepper and salt. Store in the fridge. Serve with white celery stalks or chicory leaves, grissini, red chili pepper and lemon wedges. For individual portions add some salmon caviar for a beautiful picture.
