Certain tools are so nice to have, but often end up in a corner of your kitchen without being used frequently. In our rather small kitchen in Siena all our kitchen tools are really visible, and thus much easier not to be forgotten. Today it’s time for the Portugese cataplana.
Chop 400 grams of paksoi, 300 grams of broccoli, 4 garlic cloves, 3 spring onions. Put all together in the cataplana. Add a drizzle of sunflower oil. Close the cataplana and put in the oven at 200° for 20 mins. Mix a dressing of 1 teaspoon of wasabi paste, 20 ml of rice vinegar, 30 ml of sunflower oil and 1 table spoon of soya sauce. Remove the cataplana from the oven and put 400 grams of salmon fillets (without skin or skin below) on the vegetables. Spread 1 table spoon of roasted sesame seeds. Close the cataplana and put back in the oven for 15 mins.
Serve the dish with the dressing.
