The smell of Thai rice and coconut cream is immediately in your nose when you think about it.
Clean and cut 400 grams of fish (salmon, a good white fish, and of course for us, moscardini/squid) and marinate in a mixture of 1 chopped lemon gras, 3 cm of chopped fresh ginger, 1 chopped garlic clove, 1 green chili pepper, a handful of chopped coriander, 1 table spoon of lime juice, 1 teaspoon of fish sauce, 100 ml of coconut cream, 1 teaspoon of mirin and 1 table spoon of sunflower oil. Marinate for at least 15-30 mins.
Prepare a cucumber salad with 1 sliced cucumber, 1 teaspoon of grated ginger, 1 table spoon of rice vinegar 1 teaspoon of mirin and black pepper.
Remove the fish out of the marinade. Bake shortly and add the rest of the marinade. Serve all this with some boiled Thai rice and dream about your next visit to Asia.
