Quick and tasty : frittata with scampi and parsley

For 2p mix 5 eggs, salt, pepper, a handful of chopped parsley, 2 chopped garlic cloves, 2 tablespoons of grated parmigiano, zeste of 1 lemon, 2-3 table spoons of lemon juice, and 1 chopped spicy little pepper. Add 250 grams of scampi, roughly chopped. Take a small pan (a frittata of 2.5 cm thickness is perfect) which can also be used in the oven. Melt some butter and a drizzle of olive oil. Add the mixture and stir for 1-2 mins. Put the pan in a preheated oven at 200° until the eggs get some color at the outside and are warm inside without being fully cooked. Serve the frittata with a rucola salad.
