Let’s eat some green food ;-)

Take 2 equal size broccolis. Remove the stem so that the broccoli doesn’t fall. Blanch for 4-5 mins in salted water. Put the broccoli on baking paper.

Chop 3 small leeks and 3 garlic cloves. Fry in some olive oil. Add 1 table spoon of dried thyme. Add 30 ml of good quality apple vinegar and 1 teaspoon of agave. Add pepper and salt. Fry until the leek is caramalized.

Make a few incisions in the broccoli. Fill them up with the leek and halloumi (150 gram in total).

Add a drizzle of olive oil, pepper and salt. Put in the oven at 200° for 15 mins.
