Although tomatoes are not yet at their best, I have the impression that the tomatoes here in Italy have a better taste than the ones which you find in Belgian supermarkets.

Prepare a dressing with 300 grams of a ripe mango, 1 small garlic clove, 1 small spicy little pepper, 2 table spoons of lemon juice, zeste of ½ lemon, 1 teaspoon of grated ginger, 3 table spoons of olive oil, 15 leaves af fresh basil. Use a small sized blender to prepare a smooth mixture.
Chop a spring onion in small rings. Slice different kinds of tomatoes in thin slices (600 grams in total).
Spread the tomatoes on a plate. Put burrata (250 grams in total for 4p)-pieces on the tomatoes. Add the dressing, the spring onions, pepper and salt.
What a beautiful colors, what a tasty combination. Great for lunch or first course.
