Completely relaxed after a visit to Rapolano Terme

Tuscany has many thermal resorts. Rapolano Terme is half an hour from Siena. You smell the sulfur kilometers away from your destination.

After my visit I am supposed to leave as a different person (that photo you can surely discover in the next local ‘Vogue’ or similar magazine), but the menu for today will be a great boost for vitamin A ;-).

For 2p clean 700 grams of carrots (half purple and half orange). Cut them in equal pieces of 3 cm length. Add 4 chopped garlic cloves and 1 chopped shallot. Put them in the oven at 180° with a good drizzle of olive oil and a few bunches of fresh thyme or 1 ½ tablespoon of dried thyme. After 30-40 mins check if they are al dente.

Cook 120 grams of farro in salted water with a bay leaf for 20 mins.

Remember the oven dried tomatoes? We kept 250 grams and the will be great with this colorful salad.

Mix the farro and tomatoes with the carrots. Add 3 spoons of a tasty vinegar (I used apple vinegar), pepper and salt.

Spread the mixture on a plate with rocket salad. Finish with grated old pecorino (certain things get better with age!).
