Pure and healthy!

Checking the fridge while making my shopping list for next week provides the following loot : 1 courgette, 1 fennel, 2 enormous yellow sweet peppers, 4 purple carottes, cherry tomatoes and a few spring onions.

1 Yellow sweet pepper will make a delicious soup for tomorrow and all the other vegetables will make a colorful dish in combination with a fish filet.

A tajine is a perfect tool to cook in the oven without stirring or burning. Chop all the vegetables roughly. Add a few chopped garlic cloves, a spicy little pepper, 2 bay leaves, 3 branches of fresh rosemary, salt and a drizzle of olive oil. Put in the oven at 200° for 40 mins. Check if the vegetables are almost al dente and if so, put the two fish filets on top of the vegetables (without the lid  this time). After another 15 mins the meal is ready. The amount of veg wil surely be enough to satisfy your appetite, but for those with a big appetite or those who prefer less veg, you can serve with rice or couscous.
