After a few belgian days it really feels good to be home again. We will start with a delicious, simple and super healthy dish.
A beautiful scorpion fish looked at me among the other fishes.
800 grams of a whole fish will be a good portion for two, so this evening no carbs. Slice 800 grams of courgettes with a peeler in thin strips. Mix them with 3 chopped garlic cloves and a chopped spicy little pepper. Add zeste of 1 lemon, 2 table spoons of chopped frozen coriander, 3 table spoons of olive oil, pepper and salt. Marinate in the fridge in an oven dish. Dry the fish, already cleaned, and fill with a few lemon slices and fresh parsley. Put in another oven dish, add a drizzle of olive oil, pepper and salt and cover with a few slices of lemon. Put the two dishes in the oven at 180° for 15-20 mins. Stir the courgettes now and again. Buon appetito, pure and fabulous!
