Afternoon delight, but as healthy as possible

I love my afternoon tea moment, it’s such a lovely ritual : tea, something sweet and a knitting project.

As I’m currently in a phase of my life where healthy food, avoiding sugars with a high glycemic index has become even more important.

DocV is looking for the most healthy and tasty afternoon delights. The following recipe is really yummie. PS social media has also advantages 😃.

You need : 2 bananas, 120 grams of grated carrots, 2 eggs, 125 grams of skyr or similar, 2 teaspoons of baking powder, 80 grams of oatmeal, 3 table spoons of maple syrup, a handful of dates ( I had only 3 dates, so I added some raisins), a pinch of salt,  40 grams of raisins, 1 teaspoon of cinnamon and 30 grams of grinded piatacchio.

Put the bananas, eggs, carrots, skyr, baking powder, salt, oatmeal, dates, cinnamon and maple syrup in a blender. Mix shortly. Add the pistacchio and raisins. Stir.

I prefer to make individual portions, so I used one of my silicone, shaped baking forms. Grease the insides with some olive oil. Pour the dough in the holes. Bake  in a preheated oven atc 180° for 20- 22 minutes (depend on your oven). Cool down. Enjoy your afternoon tea and let me know what you think.
