Italian cooking in the archipelago of Stockholm

Today we visited Stockholm. As we travel with our adorable dog Oskar, we visit a city in a different way. Our goal is not to see every little angle, but to sense the vibe. After our 17 kilometers of walking Iris found us an amazing spot outside the city where we could enjoy an incredible peaceful dinner with an amazing sunset.

I grabbed 2 broccoli and 200 grams of buffalo mozzarella before leaving the city center. We will have an easy pasta tonight

Boil salted water in the simmer pan. Once boiling add 160 grams of pasta ( I didn’t have orecchiette, which are normally used for this combination). Continue to boil. After 6-7 minutes, add the chopped broccoli ( stem included) for another 4-5 minutes, until the pasta is al dente. Drain, keep some of the cooking water.

Chop and fry 4 garlic cloves, 2 chili, the zeste of 1 untreated lemon, 1 table spoon of pine nuts and 2 table spoons of fresh thyme. Stir and fry. Add the content of a little can of anchovies. Stir and continue to bake. Add some of the cooking water. Stir an allow to simmer. Add the pasta and broccoli. Mix carefully. Spread the mozzarella. Stir and heat. Finish with fresh thyme. Serve with the juice of the lemon. Enjoy dinner outside,  enjoy the view.
