All in one pasta alla Norma

We are still on the island Fårö…. it is such a special place, so incredible peaceful and magical with the limestone sea stacks( rauk in Swedish).

What do I prepare on our second evening. I still have all ingredients for a pasta alla Norma : pasta, garlic, red onion, chili pepper, eggplant, fresh tomatoes, dried basil, some fresh thyme, and parmesan cheese ( the traditional recipe has  ricotta salata instead).

I love opera, although I don’t know anything about it. So, pasta alla Norma, related to Bellini’s opera Norma, is also one of my favorite recipes.

Chop and fry 1 red onion, 2 eggplants on a drizzle of olive oil. Add 2 teaspoons of dried basil and a few stems of fresh thyme ( almost dying in  my little camper garden). Stir and bake. Add 4 chopped garlic cloves,  2 chopped chili and some salt. Stir and continue to bake. After almost 15 minutes of baking, add 130 grams of whole wheat penne and 500-600 grams of chopped local tomatoes. Stir and continue to simmer. Add 100-200 ml of extra liquid and 1/4  of a vegetable stock cube. Stir. Close the lid. Continue to simmer for approximately 15-20 minutes. Stir regularly. Add 2 table spoons of chopped black olives. Taste, add pepper and salt. Once the pasta is al dente, serve with grated parmesan. Enjoy the amazing vibe of Fårö by 🌙.
