I bought real bacon for me and a vegetarian variety for Iris. It’s remarkable how the vegetarian varieties imitate the real stuff.
Our ingredients for tonight : 110 grams of a light herbal cheese, eggs, the bacon varieties, 500 grams of red bell pepper and 1 fennel. How can I cook all of this without using to many pans???
Chop and fry the bell pepper, 2 chili, 4 garlic cloves and the fennel in a drizzle of olive oil. I use the simmer pan for most of my recipes. Stir and fry ( the gas stove is not really powerful, so frying is probably not the right thing to say). Add a few stems of fresh thyme and 2 teaspoons of dried basil. Bake until al dente.
In the meantime, bake the chopped vegetarian bacon imitation first. Set aside. Do the same with the real one. Set aside.
Mix 4 eggs wit the cheese. Taste, add pepper and salt ( remind : the bacon is already salt). Pour the mixture in the same pan as the vegetables. Gently stir, to allow the eggs to spread equally. Reduce the fire.
Once almost done, put the different bacons at another half of the pan. Press gently in the eggs, vegetables mixture, but be careful not to cross the line. Cover the pan to continue to cook. Finish with a few leaves of fresh basil. Enjoy campervan cooking.
