With the relaxing sound of the rain, while Iris is reorganizing our drying laundry, I prepare a real number one campervan recipe.
Chop and fry 1 red onion, 4 beautiful sweet bell peppers, 4 garlic cloves in a drizzle of olive oil for a few minutes. Add 150 grams of whole wheat pasta. Stir. Add 2 teaspoons of dried oregano, 1/2 cube of good quality vegetal stock, black pepper and 500 ml of tomato passata. Stir and allow to simmer. After 5 minutes, spread 200 grams of feta cubes. Close the pan and continue to simmer. Stir now and again. Cook until the pasta is al dente. The feta cheese has completely dissolved and creates a creamy effect.
