Ricotta pancakes

Pancakes are my favorite afternoon delight and this recipe is awesome.

You need 180 grams of selfraising flour, 250 ml of semi skimmed milk, 3 eggs, 125 grams of ricotta and 2 sachets of vanilla sugar.

Seef the flour. Add a pinch of salt and tbe vanilla sugar. Mix the egg yolks with the ricotta and milk until you obtain a smooth mixture. Mix with the flour. Beat the egg whites stiff in the kitchen robot. Mix gently thro. gh the dough.

Heat a small sized pan. Brush the pan with peanut oil. Start baking the pancakes at both sides. Build a small tower. Serve with the topping of choice. PS a timeless afternoon delight
