Mango, avocado and lime…so delicious, but so bad for the planet…I hope you will understand.
The combination of mango, avocado, chili, garlic, lime, fresh coriander and shrimps is more than awesome. It’s the perfect compensation for the cold temperature outside.
Marinate 400 grams of peeled raw ( defrosted is perfect and surely intestines free) scampi in a mixture of the zeste of 1 lime, 2 table spoons of olive oil, 3 cm of grated fresh ginger, 4 chopped garlic cloves, 1 chopped chili, pepper and salt. Store cool and stir now and again.
Chop 2 ripe avocados, 2 mangos and 1 red onion. Mix with the juice of 2 lime and 1 table spoon of olive oil in a large salad bowl. Add 2 table spoons of chopped fresh coriander. Store cool of outside 😉.
Once ready to start dinner, heat a pan. Bake the shrimps and the marinade until ready. Mix with the salad. Finish with fresh coriander.
