Health wise I pretty sure docV is doing great. 5-6 k of running every 2 days, regular walks with Oskar and training arm and abdominal muscles every other 2 days. Kcal wise I could consider to pay more attention. ‘A drizzle of olive oil’, some nuts, and, sadly enough, some cheesy snack in between, there is room for some improvement ( not to mention my love for red wine).Let’s try…Use a spoon for the drizzle. Prepare dinner in advance to avoid extra snacking while cooking, restrict wine for weekends and specials.For tonight’s dinner, clean and chop 1 kilo of carrots and 1 large bell pepper. Put in a large oven dish. Add 4 chopped garlic cloves, 1 chopped chili, 4 cm of fresh ginger and 1 chopped red onion. Add 1 table spoon of curry powder, 1 table spoon of dried oregano and 3 table spoons of olive oil.Mix. Bake at 200° for 1h. Stir halfway. Cover with aluminium foil to prevent evaporation. Finish with 1 table spoon of soya sauce.
Serve with grilled chicken and grilled vegetarian ‘burger’.
PS While cooking, write a blog post, wash dishes, clean the kitchen, plan dinner for next day, do some video calling, read a book….and if you’re really craving, eat a carrot 😉.
