The first real cold has arrived, although still sunny and also really windy. After a walk with Oskar, we are ready for warm tea and an upside down pear almond cake.
Remove the skin and seeds of 5 little pears. Slice and mix with the juice of 1/2 lemon and the leaves of a few stems of fresh lemon thyme.
Melt 150 grams of unsalted butter in the microwave. Cover a cake form with baking paper. Brush some butter on the paper. Spread the pears ( without the lemon juice).
Mix the butter with 140 grams of honey. Mix with 2 eggs. Mix 70 grams of self raising flour with 100 grams of almond flour, 1/2 teaspoon of baking powder, vanilla extract and a pinch of salt. Add the butter egg honey mixture to the flour. Mix until you obtain a smooth dough. Pour the mixture on the pears. Bake for 35-40 minutes at 170°. 🤗
